Dairy, honestly — not the villain it was assumed to be

Dairy is caught between "essential health food" and "inflammatory poison", and the truth is calmer than both. The honest headline: despite its saturated fat, dairy is roughly neutral-to-modestly-beneficial for most outcomes — with real differences between products and honest limits to the data.

The "dairy matrix" surprise

By the old logic, dairy’s saturated fat should make it bad for the heart. But whole foods behave differently from isolated nutrients: the structure of dairy — the "matrix" of fat, protein, calcium and fermentation — seems to blunt the expected effect. Cheese, for instance, raises LDL cholesterol less than butter with the same fat content.
