Seed oils, honestly — the internet’s favourite villain
Seed oils have become the internet’s favourite dietary villain. The honest headline: the claim that they are inflammatory "toxins" is not supported by human evidence — replacing saturated fat with these polyunsaturated oils actually lowers heart-disease risk. The one fair caution is different, and smaller.
The claim vs. the evidence
Seed oils (soybean, sunflower, canola, corn) are rich in omega-6 linoleic acid. The viral claim is that omega-6 drives inflammation and disease. That story rests on a chain of biochemistry — linoleic acid can convert to arachidonic acid, which feeds inflammatory molecules — that sounds convincing but does not play out in human bodies.
When you measure what actually happens in people, the picture reverses.

- Replacing saturated fat with these oils lowers heart risk — Randomised trials swapping saturated fat for polyunsaturated vegetable oil cut cardiovascular disease by roughly 30%, per a major heart-association review. This is among the better-established diet–heart findings. (established)
- Higher omega-6 in the body tracks with LESS disease — Pooling ~69,000 people, those with higher linoleic acid measured in blood or fat had lower cardiovascular disease, cardiovascular death and stroke — the opposite of the "inflammatory toxin" claim. (established)
The fair caution (and what’s hype)
- Seed oils are a marker of ultra-processed food — The reasonable concern isn’t the oil molecule — it’s that lots of seed oil usually means lots of fried and packaged ultra-processed food. Cutting those foods is sensible; blaming the oil itself misreads why. (note)
- “Seed oils are toxic / cause inflammation” — This overreaches badly. Human biomarker and trial evidence doesn’t support it. Cooking whole foods at home in whatever fat you prefer — olive oil, seed oil, butter in moderation — matters far less than the overall pattern. (hype)
What we still don’t know
- Does very high omega-6 with very low omega-3 matter? The omega-6-to-omega-3 ratio is debated; getting enough omega-3 (oily fish) is the well-supported half. An extreme imbalance may matter, but "cut all omega-6" isn’t the answer.
- Effects of repeatedly reheated frying oils Degraded, reused frying oil produces harmful compounds — a real issue with deep-fried food, separate from fresh seed oil used at home.
