Ultra-processed food, honestly — the modern default
Ultra-processed food is now most of what many people eat — and one of the most debated topics in nutrition. The honest headline: the evidence linking it to worse health is large and consistent, but mostly observational, and "ultra-processed" is a broad, imperfect label.
What "ultra-processed" actually means
Ultra-processed foods (UPF) are industrial formulations made largely from refined ingredients and additives you wouldn’t cook with at home — think soft drinks, packaged snacks, mass-produced bread, reconstituted meats and many ready meals. The common definition is the NOVA system, which sorts food by how much it’s been industrially transformed, not by its nutrients.
That’s also the label’s weakness: it lumps a sugary cola together with a wholegrain supermarket bread. So treat "UPF" as a useful rough signal, not a precise verdict on any single item.

What the evidence supports
Large, consistent — and mostly observational.
- Higher UPF intake tracks with worse health — An umbrella review of 45 meta-analyses linked higher UPF intake to ~50 adverse outcomes, with the strongest (convincing) evidence for cardiovascular death and type-2 diabetes, and suggestive evidence for all-cause mortality and depression. It is association, not proof — but it is a lot of consistent association. (emerging)
- More UPF, more cardiovascular disease in large cohorts — In a 105,000-person cohort, each 10% higher share of UPF in the diet tracked with higher rates of cardiovascular, heart and cerebrovascular disease. Observational — but the dose-response pattern is notable. (emerging)
- It’s engineered to be easy to overeat — A tightly controlled feeding study found people ate ~500 more calories a day on an ultra-processed diet than a matched unprocessed one — and gained weight — despite the diets being matched for nutrients. Soft, energy-dense, hyper-palatable food is simply easy to eat too much of. (emerging)
The honest nuance
- Not all UPF is equally bad — The category spans sugary drinks and processed meats (worst signals) to wholegrain breads and plain yoghurts (much less concerning). Processing itself may matter less than the sugar, salt, refined starch and low fibre that often come with it. (note)
- The practical move is simple, not puritanical — You don’t need to fear every package. Shift the balance toward mostly whole and minimally processed foods, and cut the obvious ultra-processed staples (sugary drinks, processed meat, packaged snacks). Perfection isn’t the goal; direction is. (note)
What we still don’t know
- Is it the processing, or the nutrients? We can’t yet cleanly separate "ultra-processing" from the sugar, salt, refined starch and low fibre that usually travel with it. It may be mostly the latter.
- Which specific UPFs matter most? The NOVA label is broad. Untangling which processed foods are genuinely harmful versus merely convenient is an active research question.
